Cellar for up to 15 years. No need to decant before serving. Warramate winery has been in existence for the last 40 years. It is located between the Coldstream Hills and the iconic Yarra Yering. It is owned by Ed Peters and his group and currently managed by the amazing Sarah Cowe as the chief winemaker. She takes pride in winemaking and her efforts surfaced when she became the first woman to win the James Halliday Winemaker of the year award. Yarra has always had a reputation for Chardonnay and Pinot but its traditional strength lies in its Cabernet, with some of the best producers in the country from the region. This Warramate Cabernet is extraordinary and is deep rosey in the glass. On the nose it exhibits aromas of sarsaparilla and cedar followed by savory graphite and tomato bush with a vanilla touch and overlay of sweet dark fruit. On the palate, it shows signature green vegetal notes and fresh violets and raspberries with firm tannins that give it a beautifully dry finish. This Cabernet is made in the same way as the Yarra Yering Dry Red No.1 using the custom-made tea chest open fermenters. It is then aged in French Oak barrels, 10% new and the rest old, for 18 months. It is ready to drink. This Australian Cabernet Sauvignon wine pairs well with poultry, lamb and beef.
